Abstract

Organic solvents extracts of grain and a flour from it, mainly, contain triglycerids of fatty acids, their decomposition products (di-and monoglycerids), fatty acids and products of their oxidation which together form oil. Oils of cereal cultures have unique fatty acid contents and play the important role in the food industry.
The purpose of this work - the analysis of structure of oils of cereal cultures and flours from them by NMR spectroscopy, as it allows practically full to establish presence of all soluble organic compounds without additional sample treatment.
